First, I'm so happy that there's a Ketogenic cookbook that is dairy-free. I am lactose-intolerant and I really think it will make the difference between sticking to this way of eating and not. There's a lot of variety in this book to keep me cooking creatively which is important to me. I also like that the author didn't include recipes that simply substitute imitation cheeses. Even before I couldn't eat dairy I didn't like cheese and am so happy to see recipes not dependent on it.I've had the cookbook for 3 days and have tried several of the recipes. Last night I made 2 of them: Pork Chops with Dijon gravy on page 242, and Keto Custard on 339. The instructions for the Dijon gravy are to "Stir until slightly thickened". I knew that wasn't going to happen since it was just 2 ingredients; chicken broth and mustard. Let's just say it looked nothing like the picture which I think had to have been thickened for the purpose of the photo. Also, the gravy is white in the picture - don't know how that happened with 2 yellow ingredients! As for the custard recipe, there is a glaring mistake. The directions are to bake at 325° for "8 to 10 minutes". As an experienced cook I knew there is no way this could be accomplished. At the 10 minute mark the custard was still a liquid. I then took the 4 ramekins from the oven, added them to a pan filled with hot water (to the middle of the ramekins) and put them back in the oven. They were finally done "50" minutes later (1 hour in all). The custard is delicious but be aware it needs a lot more time in the oven than 10 minutes!Good cookbook and I'll enjoy using it. I just think common sense will have to prevail with some of the recipes.

I have been very disappointed by what I am seeing in this book, but I do hope I will change my mind! If so, I will come back and give it more than 3 starl. I am giving it 3 stars because it is so well laid out with a great index, etc. I can't give it more than that because I just do not find very many things at all that even appeal to me by looking through this book. For example, a protein shake with 4 hard-boiled eggs in it? YUCK. I had to turn the page quickly!Compared to other keto cookbooks I have bought, THIS one is way more complicated. I am VERY surprised by all the positive reviews. It just makes me wonder how much these people are REALLY using this book on a daily basis.I have HAD to cook from scratch for almost 6 years now so my special cookbooks are my guide for every meal. I think I am a pretty good judge on what is "simpler" and what is more complicated. I define "complicated" by: how much prep is required? Does this recipe include ingredients I have on hand or will I have to go to the store? (I live 30 minutes from a grocery store) Will the needed ingredients be easy to find or will I have to drive an HOUR to a Whole Foods to get them, OR order them from Amazon? Is this something my family will eat? SO FAR....I would put THIS cookbook in the more complicated category, as well as in the category of, "Well, I MIGHT find something I can use, but the jury is still out on this one."I have used another keto cookbook that I love, but I cannot do all the dairy. So far it's looking like I can alter those recipes to be dairy-free a lot more than I will be able to use this cookbook.I appreciate all the time and effort the author has put into writing this book and if it works for her and others who have purchased it, I am happy for all of you. The book is beautifully done, so well organized, very informative, and I feel she added a personal touch. For all of that, I would give her 5 stars, easily! But for what I paid, and knowing I probably won't use it that much....I can't justify an overall 5 stars.I'm not giving up. I'm going to TRY. And if I change my mind, I will gladly come back and update my review! :-)
